Lilly's Gourmet Maple Butter, A "True" Story

Elianne Prince came from humble beginnings in Ste. Eulalie, Canada. After teaching in a one-room schoolhouse for several years she married my Pepere, Ephrem Horion. Several years later they moved to Manchester, NH, where she had fourteen children in eighteen years. Needless to say, life was hectic and money was scarce.

One way my grandmother, or Memere, as she would later be called by her many grandchildren, found she could make some money, was to make and sell her maple butter. Champagne’s Market, the local grocery store in her neighborhood, allowed her to sell it there. She sold it as Lilly’s Maple Butter. Though I was only three years old at the time she died, I would like to continue her desire to see others enjoy her maple butter.

Memere passed the recipe down to my mother so I got to enjoy it growing up. We used to have the big old stoves that had the ringers on top. The best way to enjoy the maple butter was to smother it on warm ringer toast made right on the stovetop. Though my children didn't have the experience of tasting ringer toast, they were able to savor the taste of maple butter on toast made in a toaster, as well as many other items, like pancakes, crackers, and biscuits. I hope my grandchildren will continue these traditions someday.
